Ingredients
1X serving amount: 14 cookies
Dry
bread flour, 1 cup
unsweetened cocoa powder, 0.333 cup (1/3 cup = original)
(optional) semi-sweet chocolate chips, 0.5 cups (1/2 cup = original)
baking soda, 0.5 tsp
vanilla extract, 1 tsp
sugar, 0.75 cup (3/4 cup = original)
Spices
salt, 0.25 tsp

butter (room temp), 6 TBSP
egg, 1 whole
Directions
Step 1
Preheat the oven to 350 F.
Step 2
Sift the following into a large bowl:
1 cup bread flour
0.333 cup (1/3 cup = original) unsweetened cocoa powder
0.5 tsp baking soda
0.25 tsp salt
Set aside.
Step 3
In the bowl of a standing mixer, with the paddle attachment cream:
6 TBSP butter (room temp)
0.75 cup (3/4 cup = original) sugar
1 whole egg
1 tsp vanilla extract
Cream until light and fluffy (2-3 minutes).
Step 4
Slowly add the dry ingredients to the wet ones. With the paddle attachment, mix until just combined. Now add:
0.5 cups (1/2 cup = original) semi-sweet chocolate chips
Once mixed, line a baking sheet with parchment paper and scoop out 1 TBSP of the cookie dough for each cookie (the original measurements make around 14 cookies).
Tip: I don't usually add chocolate chips, I think this recipe is great without them, but find what you like!
Tip: Do not flatten the cookies out, leave them round. They will flatten out in the oven.
Step 5
Bake at 350 F for 10 minutes, then let the cookies cool to firm up.
Serve with a glass of milk and enjoy.
